Minsky’s and Osteria IL Centro proprietors, Gregg Johnson and Brent Wittrock, traveled to Sonoma County to work with Trentadue Winery to craft a wine to perfectly pair with Gourmet pizza. Their choice of Trentadue came from the winery’s long history of producing rich, flavorful reds, perfect for enjoying now or aging. The Trentadue family purchased their Alexander Valley vineyards in 1959 and have since been growing a wide range of varietals – Cabernet Sauvignon, Petite Sirah, Old Vine Zinfandel, and other Italian and Bordeaux varietals.

During their visit to Trentadue, Johnson and Wittrock worked with the winery’s famed winemaker, Miro Tcholakov, to begin determining what they wanted their wine to be. Tcholakov guided them through the entire winemaking process at Trentadue, from grape growing, harvesting, fermentation, aging, and finally, blending the finished wines. The resulting wine – Minsky’s Pizza Red.

This Rhône-style blend is deep red in color and predominately a Zin blended with Sirah, Carignane, and Merlot. It is fruity and complex with intense aromas of black cherry, blueberry, and cherry cola, with nuanced flavors of ripe plum, vanilla, cocoa, oak, and toast coming through after aeration. The mouthfeel is fresh and youthfully bright with a long, memorable finish. Enjoy it now or age for 2-5 years for a mature expression.

Blend:

• 56 % Zin
• 18% Petite Sirah
•  11% Carignane
• 11% Merlot
• 2% Syrah
• 2% Sangiovese

Aging:

• 14 months in small oak barrels
• 15 % new French oak, balance in neutral oak
